This is going to be a random post. I am a bit scatter brained and simultaneously stumped for blog topics right now. There is a lot going on! First off, I wanted to welcome any new readers coming over from Weddingbee. I noticed that I’ve been getting a good number of visitors from my old favorite hangout. I think someone nice must have linked to my blog? Welcome, bees, please feel free to look around and make yourself comfy! I have written extensively about our TTC (trying to conceive) journey, and you can find our updated TTC timeline here.

Second, I want to get back into posting about fashion and clothing. I am going to put together a few of those posts and show you some of what I have been wearing lately. Outfit posts are so fun, and I miss them. I just haven’t had the time to devote to them, but I’m going to make time.

Lastly, the Less than Domestic Goddess is what I call myself, right? Well, I must have sipped the Domestic Goddess Kool-Aid, my friends, because look what I (with a ton of help from mom) made for dinner.

Gluten-Free Goddess’s Sweet Potato Black Bean Enchiladas
I have never made enchiladas in my life. I have never cooked with sweet potatoes in my life. They were sooooo good and cheap and healthy. I was in Whole Foods for a really long time finding all the best ingredients according to my diet restrictions. I also might have used a lot more cheese than is appropriate. But, whatever. They were a huge hit, and will definitely be made again. 
Anyone care to share their favorite healthy meal recipe? I’m going to try to make this cooking thing a somewhat regular occurrence around here. 😉

    I love sweet potatoes. I make sweet potato fries all the time with a touch of evoo, salt and pepper. Now that I think about it, I might have some with dinner tonight. YUM!

    My New Year's resolution was to try one new recipe a week (usually weight watchers friendly) and blog about it. I have several gluten-free recipes that I want to try. I'll blog about them as I try them. I finally made kale chips this week.

    ooo!! I'm going to have to try that! I love sweet potatoes. SO much good stuff in them. 🙂 My favorite way to prepare them is baked with a little bit of a cinnamon. Yum!

    these enchiladas look amazing! i love to cook and do so almost every meal we eat so i'm always on the hunt for something new and yummy – these are now on the list!
